Enzymes speed up reactions in cells. Most enzymes are proteins, which have biological activity. There are 5,000 enzymes known to science, but many more exist. They contain only a small amount of enzymes and thus are relatively difficult to digest, but they have the potential to turn into a living food. How? By soaking and sprouting them their enzymes are activated. We can further increase their digestibility and energy potential by blending and fermenting them. These are common practices in the Living Foods Lifestyle®. You might ask: “Does cooked food contain any enzymes?” The answer is “No, because in the cooking process all the enzymes and a large part of the other nutrients are destroyed.”
